Pre-heat oven to 400 F. Lightly coat a 9"x13" baking dish with cooking spray; drizzle pan with 2 tsp of oil. Roll bok choy in the oil to coat. Turn so cut side is down.
For Sauce: in a small bowl whisk together all sauce ingredients. Warm in microwave for 1 -2 minute. Set aside
Cook vegetables for 6-8 minutes. Turn bok choy over and cook 6-8 minutes more. Remove from oven and set oven to broil. Drizzle with sauce and return to broil for 2-3 minutes or until bok choy leaves are slightly charred and stems are tender crisp.
