Instructions
  1. Prepare the vegetables and fruit by peeling and chopping or processing on the chop setting of a food processor.
  2. Heat the vegetable oil in a large stock pot over medium heat. Add the garam masala and cook until fragrant.
  3. Add the chopped carrots, onion, apple and celery and cook, stirring, until softened. About 6-8 minutes.
  4. Add the chicken broth, coconut milk, red lentils, grated ginger and salt. Bring to a boil over high heat then reduce the heat to low and simmer until lentils become tender and begin to break down.
  5. Add chicken, lime juice and cayenne. Heat to warm through. Taste and adjust seasoning with lime, cayenne and or salt.
  6. Ladel the soup into serving bowls and garnish with lime wedges and cilantro.
