Rice
  1. Cook rice according to package directions.
Chicken and kale
  1. Heat a very large non-stick wok or frying pan over medium. Add oil, then onions, garlic and ginger. Cook until onion is soft, 3-4 min. .
  2. Add chicken. Sprinkle with sugar. Add lime juice, oyster sauce, chili flakes and stir to combine.
  3. Add kale and cover with lid. Cook until kale begins to wilt - about 5-7 minutes. Stir to combine with chicken and seasonings.
  4. Divide rice among 4 plates. Divide the chicken and kale in 4 portions toping each of the 4 rice portions.
Fried Egg
  1. Return the pan to the burner over medium heat. If needed, lightly spray with non-stick spray. Crack eggs in pan and cook covered until whites are no longer runny - about 3 minutes. Flip and cook 2 more minutes if you like the eggs over easy. Top each plate with an egg. Garnish with pickled ginger if desired.

This quick saute of kale and chicken is glazed with a sweet and spicy sauce of lime, brown sugar and chili with help from oyster sauce to lend an asian influence.  Served over rice and garnished with a fried egg and pickled ginger your meal is complete!
