Irish Inspired Power Bowls

Makes 6 servings

Green barley, orange sweet potato, roasted mini cabbage (aka Brussels Sprouts) and curried lentils put a nutritious boost in your Nutrition Month and St Patrick’s Day.

Ingredients

For the Green Barley

  • 3 Tbsp olive oil

  • 1.5 cup barley

  • 1/2 cup + 2.5 c broth 1.5 c baby spinach

  • 1/2 c parsley

  • 1 green onion

  • 1 clove garlic

    Roasted Veggies

  • 1 lb Brussels sprouts halved

  • 3 medium sweet potato peeled & cubed (0.5")

  • 3 tbsp olive oil, divided

  • 1/2 tsp each smoked paprika & chili powder salt and pepper to taste

    For the Spiced lentils

  • 1.5 c green lentils

  • 3.5 c water

  • 2 tsp curry powder,

  • 1/2 tsp chili powder 1

  • tsp lime juice

  • salt and pepper to taste

    Toppings & Such

  • Baby spinach or kale

  • Pumpkin seeds or Roasted Chick peas

  • Lemon or Lime wedges

  • Dressing of choice if desired
