1 ½ cups pancake mix (see PDF for basic mix recipe)
2 Tbsp oat bran
1 tsp cinnamon
3 large eggs
3/4 cup ricotta cheese
½ c water
1 Tbsp vanilla extract
2-3 tsp oil or butter for cooking
