Start your day with a tasty treat of pancakes! With ricotta for protein and oat bran for fibre, these will keep you powered up all morning. Bonus - Pass on boxed pancake mix in favour of this make-ahead blend of simple staples likely already in your pantry!

Ingredients

  • 1 ½ cups pancake mix (see PDF for basic mix recipe)

  • 2 Tbsp oat bran

  • 1 tsp cinnamon

  • 3 large eggs

  • 3/4 cup ricotta cheese

  • ½ c water

  • 1 Tbsp vanilla extract

  • 2-3 tsp oil or butter for cooking
